Sunday Dinner // Chicken Caesar Sandwiches

As a college student I don't have a lot of time (or motivation) to actually cook dinner. But sometimes I get motivated by Pinterest and decide to try something new. My first successful attempt at a Pinterest recipe was when I made these chicken caesar sandwiches. This recipe was so simple that I literally thought I was doing something wrong. But when I tasted the deliciousness, I knew I had done everything right.

Here's what you will need:
4 Boneless & skinless chicken breasts
3/4 cup Caesar dressing
1/2 cup Parmesan cheese - shredded (I used grated and it was fine)
1 tablespoon dried Parsley
2 teaspoons pepper
Romaine leaves
Hamburger buns

Directions:

  1. Put chicken at the bottom of your crockpot and pour in 1/2 cup of water. Cook on low for 3-4 hours.
  2. Remove chicken from crockpot and shred it using two knives.
  3. Put shredded chicken back into crockpot along with dressing, cheese, parsley, and pepper and cook on low for 30 minutes.
  4. Remove from crockpot, slap it on your buns, top it with lettuce, and enjoy!

Yes, it's really that simple. I didn't follow the directions exactly because I didn't have tablespoons or teaspoons to use but I just seasoned it until I thought it tasted good to me! One mistake that I did make was forgetting that this was a crockpot recipe so it needed to be started way before I actually planned on eating it. It literally took me an entire week to make this but it was well worth the wait.
